The Unique World of Banana Beverages: From Juice to Gin

But did you know that in Uganda, bananas are transformed into a variety of alcoholic beverages, ranging from mild banana beer to fiery banana gin? This tradition has intrigued many, including comedian Romesh Ranganathan, who experienced the process firsthand in rural Uganda. Let’s explore the fascinating journey of how bananas become booze.

Making Banana Juice

The foundation of these drinks starts with banana juice. The process begins by selecting ripe East African Highland bananas, which are then mashed to extract their liquid. Traditionally, this is done using sheer muscle power, squeezing the bananas to produce a thick, pulpy juice. To refine it, water is added, and the mixture is strained through banana leaves, creating a smooth, naturally sweet banana juice. This juice can be consumed as is or used as a base for fermentation.

Fermenting into Banana Beer

To take things up a notch, banana juice undergoes fermentation, transforming it into banana beer, locally known as “tonto” or “mwenge bigere.” The process involves adding ground sorghum, millet, or maize flour, which introduces natural yeast. After fermenting for about 24 hours, the juice becomes a mildly alcoholic drink with an alcohol content of 2% to 11%, depending on the duration of fermentation. This beer is a staple at social gatherings and cultural ceremonies across Uganda.

Distilling Banana Gin

For those who prefer stronger spirits, banana beer can be distilled into a potent drink called banana gin, locally known as “waragi.” This process involves heating the fermented beer, capturing the evaporated alcohol, and condensing it into a high-proof spirit. The result? A fiery, banana-flavored gin that packs a punch. Waragi is widely consumed in Uganda and is often homemade, making each batch slightly different in taste and strength.

Romesh Ranganathan, a British comedian, brought global attention to Uganda’s banana-based alcohol during his travel documentary series The Misadventures of Romesh Ranganathan. In the episode featuring Uganda, he actively participated in the process, from juicing bananas to tasting the final product.
