A sparkling sake, in association with world famous chef Alain Ducasse and renowned Japanese sake brewery Shichiken is in the works and we can’t wait! The brewery is based in the northern part of Yamanashi region, located in the picturesque locales of Mount Fuji.
The sparkling sake is made from water from Hakushu and uses the traditional brewing methods for sake to create the base. The spirit is then aged in sakura barrels and has the perfect end with a second fermentation process. The aging in the sakura barrels imparts a slight sweetness to the sake which sets it apart.
The brand states that this smooth sake is fruit-forward and has hints of both bitter and sweet notes which makes the spirit go well with a majority of Ducasse’s special dishes.
The three flavour layers that come out in the sake’s nose is an initial hit of a white floral, then a white fruit and ending with a delicious intense flavour with hints of cardamom and pepper.
The sake is set to release on 29 April and will be priced at JPY5,000.
