While I moved city to city to come to Mumbai, Alex Liberati moved from Italy, Rome to Denver, US to set up Liberati Restaurant & Brewery and bring Oenobeer to people.
Oenobeer is a beer and wine hybrid, where grapes are added to the beer during its fermentation process. The law asks that 49% of the fermentable sugars in the beverage should come from either grapes or grape products.
Different varieties of grapes create different types of Oenobeer. Liberati Restaurant & Brewery sells 12 variants of Oenobeer currently. With a profile similar to an aged port wine is the ‘Oximonstrum’ which uses Nebbiolo and Barbera grapes, then there is a dessert-inspired ‘Recioto Denveris’ that is made with Petit Verdot grapes and the champagne-like ‘Short France’ that uses Pinot Noir grapes.
