Why Everyone Is Talking About Picante: The Cocktail Taking Over Indian Bars

All across India, in top-tier bars, speakeasies, and rooftop lounges of Mumbai, Delhi NCR, Bengaluru, Goa, and other hubs, one cocktail order reverberates loudest and most frequently among all other nightlife calls, the Picante. The bright green-and-gold cocktail served over heavy rock ice with a floating slice of red chili has quickly become the favorite of many in India. So much so that it has now left bartenders and mixologists alike scratching their heads and wondering why a spicy variation of the classic Margarita has become India’s most requested drink. This unsobered article is here to answer that precise question.

The Origins Of The Picante

Before we take a look at the reason behind the cocktail being so loved in India, let us see how this drink actually came to be. In the pantheon of classic cocktails, Picante is actually quite recent. To be more precise, the cocktail was invented around the 2010s in the US.

Esteemed and talented mixologist Chris Ojeda came up with this drink during his tenure with the Soho Beach House in Miami. When Ojeda first came up with the idea, his objective was to design a standardized, perfectly balanced spicy tequila signature cocktail that delivered consistent heat, citrus, and herbal aroma each time it was made.

It is safe to say that he most certainly succeeded in achieving the objective. Patrons of the establishment started loving and frequently ordering the cocktail, which was then called Picante de la Casa, in no time. Pretty soon, the recipe of the drink was widely cracked, and it managed to escape this private members’ club into the wide world.

The reason why the drink is called Picante is simple. Picante is the Spanish word for piquant, meaning spicy. In the cocktail, it refers to the spicy, peppery heat delivered by the chilli infusion. Today, the cocktail stands tall among other classic ones such as Espresso Martini, Paloma, Highball, Margarita, Shirley Temple, Gimlet, Cosmopolitan, Bloody Mary, and Aperol Spritz.

Why The Indian Palate Loves The Picante

There are a few reasons why the drink seems to be a hit among Indians. Mainly, the reason is the familiarity of ingredients and the bold, flavor-forward profile of the cocktail.

The "Swicy" (Sweet + Spicy) Craze: Indian cuisine is a balancing act of sweet, sour, salty, and spicy elements. So, the base flavors of the cocktail are well within the comfort zone of the desi palate. The combination of agave nectar sweetness, fresh lime acidity, and raw chili capsaicin feels naturally intuitive rather than jarring.

Familiarity with Key Ingredients: Fresh green or red chilies, or mirch as they’re known in India, and fresh coriander or cilantro, known as hara dhania, are kitchen staples in India. Using these household fresh garden herbs in a high-end spirit creates an instant familiarity with the flavor profile of the cocktail.

The Premium Tequila And Agave Boom: The spirits landscape in India has experienced a massive shift away from dark spirits. The country is increasingly moving toward 100 percent Blue Weber Agave tequilas and artisanal mezcals. The Picante serves as the ultimate vehicle for reposado tequila, making the spirit seem more accessible to Indian drinkers.

Anatomy Of The Perfect Picante

If you’re looking to make the perfect picante, there are a few key elements that are essential that you need to get right. These include the spirit base and the fresh citrus and sweetener elements, and finally, the herbal and heat kick.

The Spirit Base: Your base should be something like a Reposado Tequila, around 50 to 60 ml of it. This is because a true Picante, unlike a standard Margarita that relies on unaged Blanco tequila, demands Reposado. The light oak aging brings vanilla and caramel background notes that round out the fiery pepper finish.

The Fresh Citrus And Sweetener: You also need a sweetener and a citrus element. Your best bet for this is fresh lime juice, around 20 to 30 ml, and Agave nectar, around 15 to 20 ml.

The Herbal And Heat Kick: Add fresh red or green chili slices that have either been muddled or hand-pressed. For a final, herbaceous finish, add ten to twelve coriander leaves with their stems.

Summing Up

Given its history, flavor profile, and convenience, one thing is certain: Picante is not a fleeting trend; it is here to stay and for good. As a matter of fact, Picante is the perfect emblem of the ever-evolving agave cocktail culture in India. This country certainly loves bold, flavor-forward concoctions, and Picante is definitely all of these things. So, it should come as no surprise that Picante has taken over this country in such a manner.
