That idea sits at the heart of unsobered’s newest IP, Bar Talks, a space where bars, bartenders, and signature cocktails take centre stage through stories, recipes, and the personalities behind them. For this edition, Bar Talks heads to Jaipur’s immersive speakeasy Room No. 102 to explore a cocktail that feels equal parts refined, theatrical, and deeply comforting.

Created around the richness of Diplomatico Rum, The Diplomat is designed as a warm, spirit-forward cocktail layered with bittersweet complexity and an old-world charm. The drink combines Diplomatico Rum, Remy Martini Semi Dry, sweet vermouth, spiced honey syrup, cacao bitters, and Angostura bitters to create something aromatic, elegant, and intentionally slow-paced. The cocktail reflects “quiet confidence” with notes of spice, dark sweetness, gentle bitterness, and warmth.
The overall profile leans rich, spiced, bittersweet, and aromatic without becoming overly heavy, making it the kind of cocktail best enjoyed gradually rather than rushed.

Combine honey and water gently until fully integrated, then add saffron, clove, star anise, and cinnamon, allowing the spices to slowly infuse into the syrup until aromatic. Strain and store for later use.
Add all cocktail ingredients into a mixing glass filled with ice. Stir until chilled and properly diluted, then strain over a large ice block into the serving glass. Garnish with chocolate shards and red chilli.
